Olio Nuovo from il Fustino

Ooh! What a treat! A sampling of oils from Il Fustino arrived today. I've really been looking forward to tasting these. I've got a cold, and I'm a bit congested, so I'll hold off on a full review for a few days, when I can really taste all the levels and flavor compexities.

But I've got to tell you about their Olio Nuovo now. Freshly pressed olive oil is a seasonal treat, usually only available in the weeks following the olive harvest. Some say that it has a grassy or floral taste. The brightness of freshly pressed olive oil doesn't last long. As the oil matures, the flavors mellow.

Even though my sense of smell isn't up to it's peak performance right now, I'm already very impressed with this oil. The olio nuovo from il Fustino is amazing! It's like a floral perfume. Smoothe green on the tongue, and a sharp almost peppery finish. Very nice indeed.
